Because with new updated apple device they could experience something old but still fresh again .Though as user we don’t have control over OS updates as we do have control over which typeface app/driver support particular styled typography style since it depend on software implementation capability rather than OS supportability .But still Apple could give option how user can turn back feature instead via software updates which may not necessary but nice gesture from apple towards designers who prefer timeless classic look/feel too)Just my personal opinion about Times New Roman situation right now and future possibilities .Apple may change their mind regarding keeping legacy typefaces supported once they got more updated versions along with other improvements in typography support as well which would affect old legendary style like TIMES NEW ROMAN too But just wait n watch ..As design world keep evolving technology keep changing ) , In general you may experiment different built
